Granola - Meringue Crunch Mango Pineapple 1 LbGrower: Solace Farm
Price: $8.00 ( 1 lb )Available (Estimated): 2
If you love crunchy, crispy granola then this is for you! I adapted a recipe for cookies that had quickly become a household favorite. This makes a super-crispy cereal, with no added fat, and I've cut the sugar to at least half that of a standard recipe, just enough to taste great – and with the egg whites, it actually has added protein! Win-win-win! This is one of my go-to breakfasts with some homemade yogurt and raw honey drizzled on top.
Ingredients are simply: almonds & walnuts, sunflower seeds, coconut flakes, oats, dried mango and pineapple dices, sugar, egg whites, sea salt.

Our own wild plums, dried into fruit leather and cut into bits, give this version of our granola a sweet-tart local twist.
If you love crunchy, crispy granola then this is for you! I adapted a recipe for cookies that had quickly become a household favorite. This makes a super-crispy cereal, with no added fat, and I've cut the sugar to less than 1/3 of most granola, just enough to taste great – and with the egg whites, it actually has added protein! Win-win-win! This is definitely one of my go-to breakfasts with some homemade yogurt and raw honey drizzled on top (right behind my all-time favorite of a fried duck egg, of course!)

Grow-Your-Own Mushroom Kit: Blue OysterGrower: Midway Mushrooms
Price: $25.00 ( 1 Grow Kit )Available (Estimated): 98
Ready-to-fruit mushroom grow kits are an easy, fun way to put heaping harvests of mushrooms on the table while learning firsthand about the wild world of mushroom growth.
First time growing gourmet mushrooms? Don’t worry! Ready-to-fruit kits make the process a walk in the park. What’s more, essentially any home is suitable for effective mushroom cultivation. This kit includes a 5+ lb fully myceliated sawdust block and detailed growing instructions. Recommended but not included: A spray bottle for H2O.
From the start of the growing process, mushrooms usually are ready for harvest in 10 to 14 days. Total yields can be expected been 1.5 and 4lb (over multiple flushes), depending on growing conditions.
The blue oyster mushroom (Pleurotus ostreatus) is a classic culinary staple beloved by many chefs for its intense meaty flavor. Resilient, productive, and forgiving of a relatively wide range of growing conditions, this particular strain produces large, stunning mushroom clusters the depth of whose vivid blue color scales inversely with temperature. Common across much of the temperate globe, including on our own Cumberland Plateau, where hardy specimens often can be found temporarily frozen solid during the winter months, white to tan oyster mushrooms of the same species grow saprophytically (on dead and dying trees), particularly in relation to hardwoods like oak and poplar. High in protein, vitamin C, niacin, and potassium, oyster mushrooms are healthy as well as profoundly flavorful. Fascinating, adaptable, and reliable, the blue oyster mushroom is a staple constituent of the mushroom cultivator’s toolkit.

The golden oyster mushroom (Pleurotus citrinopileatus) is a spectacularly tasty specialty cultivar with a distinct sweet, nutty flavor and rich aroma. Their comparatively mild flavor, by comparison with the highly meaty blue oysters, makes goldens an excellent choice for first-time gourmet mushroom eaters. This stunning bright yellow strain was derived from specimens in Eurasia, where it is a prized foraged fungus. Sautéed goldens are an unparalleled centerpiece in Alfredo pastas and risottos, though they also thrive as the main course, pan-seared in butter or oil! High in antioxidants, protein, and B vitamins, these mushies are good for the body as well as the taste buds! Golden oysters are an adaptable grower but fruit best in comparatively warm-weather conditions. They have a shorter shelf life, meaning they are best eaten within a few days after harvest.

The lion's mane mushroom is an iconic toothed fungus that occurs naturally across much of North America, where it grows saprophytically (on dead and dying trees). Closely related members of the Hericium genus occur at temperate latitudes worldwide. Its long, drooping spines are a unique feature of this mushroom. A spectacular seafood substitute that evokes the flavor and texture of crab meat, this otherworldly mushroom currently is the subject of extensive mycological investigation for its potentially neuroregenerative compounds; indeed, early studies suggest that several of its constituent compounds, particularly the “hericenones,” may help counteract age-related memory decline. Sometimes referred to as the bearded tooth mushroom, satyr's beard, or pom pom mushroom, lion’s mane has an extremely rich umami flavor with subtly sweet undertones. What’s more, its fresh, earthy smell can’t help but transport one’s imagination into a lush old-growth forest! Weird and wonderful, lion’s mane is a joy to watch grow (and to eat!).

Hellebore - Lenten Rose, Light Pink/GreenGrower: Dogwood Valley Greenhouse
Price: $19.00 ( trade gallon pot )Available (Exact): 0
Lenten rose is an evergreen, 15- to 18-inch tall groundcover with leathery, dark-green, shiny foliage. Their new growth generally appears during late January and February, and precedes the 3- to 4-inch nodding, cup-shaped flowers that quickly emerge through the mulch or snow layer. Pollen attracts mainly bumblebees during the late winter flowering period. This item has a light pink/cream flower with a greenish center, and I will list other colors separately as available.
The petals of the Lenten rose are actually sepals, and do not drop readily as with other flowers, but last for a couple of months. Some darker colors may fade over the 8- to 10-week bloom and fruiting period. As the flower turns into a fruit, mature seeds are dropped beneath the canopy of foliage. Soon small seedlings will appear in dense clusters which can be readily transplanted to additional shady sites.
Lenten roses are long-lived plants and rarely need dividing. To enhance plant growth, they can be fertilized with a slow-release fertilizer when new foliage begins to appear in late winter.
They do well under very dry conditions, are naturally deer and rabbit repellent, have very few insect pests or disease problems, and require little care.
Lenten roses have coarse-textured, dissected foliage, which combines especially well in the landscape with the delicate foliage of ferns, the more rounded foliage of hosta, and smaller-leafed perennials and shrubs. Their evergreen foliage provides winter interest when many other perennials are dormant.

Price: $5.50 ( 4" square pot )Available (Exact): 0
NOTE: Parsley is a biennial, meaning it will live for only two years. These plants are still very young and will need some growing time before you can harvest.
This slightly peppery and bright herb is so much more than a bit of green on the side of your plate. Parsley is a great source of vitamin C, calcium, iron and fiber. Raw parsley also acts as a breath freshener and has anti-inflammatory properties.
To store parsley, rinse with cool water and then wrap in a slightly damp paper towel in a resealable plastic bag and keep in the fridge.
You can dry your fresh parsley by tying a bunch together and hanging it upside down in a cool, dry place. When the parsley is completely dry, remove the stems and store the dried leaves in an airtight container. You can also dry out your parsley in a slightly warm (100 degrees F) oven or in a dehydrator.

Rosemary is used as a decorative plant in gardens and has many culinary and medical uses. The plant is said to improve the memory, and is a symbol of remembrance at weddings and funerals. The leaves are used to flavor various foods, like stuffings and roast lamb, pork, chicken and turkey, as well as barbeque. Rosemary contains antioxidants and other bioactive compounds, some of which may be useful in preventing or treating cancers, strokes, and Alzheimer's Disease.
Rosemary is native to the Mediterranean area and to Asia, and can withstand prolonged droughts. It can grow quite large and retain attractiveness for many years, can be pruned into formal shapes and low hedges, and has been used for topiary. It is easily grown in pots, and since it may not be reliably hardy in this area, it is recommended that you plant it in a container which can be brought inside, at least into a sunny garage window for some protection, in winter.

Herbal Hair RinceGrower: Cline Apothecary
Price: $12.99 ( 8 oz )Available (Estimated): 1
Herbal hair rinse is made with fresh or dried herbs (not the essential oils).
This rinse treats many of the (suspected) causes of dandruff, soothes our irritated skin, and is nourishing to our hair.
Contains, white vinegar, distilled water, hibiscus, rosemary, plantain, thyme and calendula
Rosemary – Rosemary’s volatile oils have strong antimicrobial functions, especially against fungal infections. Rosemary stimulates blood flow to the scalp, and adds shine to your hair.
Thyme – Thyme’s volatile oil constituents, especially thymol, are antimicrobial and thyme has been used by herbalists as a wound wash or poultice for preventing infections. Works against fungal infections as well as bacterial.
Calendula is a common medicinal herb and ornamental garden plant, and has been used medicinally for centuries, both internally and topically. Calendula flowers have constituents that improve healing and are anti-inflammatory. For our hair rinse, the calendula treats both the scalp and moisturizes the hair. I thought my idea using it as part of a vinegar hair rinse was unique, but then I read that Nicholas Culpeper, a 17th century botanist and herbalist mentioned using calendula juice mixed with vinegar as a rinse for the skin and scalp. (Darn, he beat me to it.)The bright yellow flowers may add some color to your hair, so I recommend starting with a small amount. Of course, if you want the color, you can add as much calendula as you like.
Plantain – Plantain is our family favorite plant for all kinds of “owies” including bee and insect stings, splinters, and cuts. Plantain has both antimicrobial as well as healing and soothing properties. Plantain soothes the scalp, relieves itching, and moisturizes the hair. We always seem to find it when we need it. If you have some growing near you, you can easily dry the leaves and store in a jar for year-round use.

Hibiscus FlowerGrower: Cline Apothecary
Price: $9.99 ( 4oz )Available (Estimated): 6
Hibiscus sabdariffa is a member of the mallow family known for its vibrant red flowers. Large, showy hibiscus flowers thrive in tropical habitats and are commonly made into hibiscus tea. The cooling, refreshing brew can be quite tart. When enjoyed hot or iced, its common to add a natural sweetener to dull the tartness. Our organically cultivated hibiscus flower is ideal for blending into herbal infusions, crafting herbal syrups, and dying fabric.
There are over 220 species within the genus Hibiscus which belong to the Malvaceae plant family. Hibiscus plants grow in most tropical areas of the world, with a minority of species able to survive in freezing environments. The abundant species found in the tropics cannot tolerate more than a few days of freezing weather and will die if such conditions persist. Hibiscus flowers come in a magnificent variety of colors. Also called roselle and ambashthaki.
Hibiscus flowers are the main ingredient in many wonderfully refreshing teas made around the world, especially in Mexico, Latin America, and North Africa. A tea known as Agua de Jamaica, or simply Jamaica in Mexico, is usually served chilled with copious amounts of sugar to sweeten the natural tartness of the hibiscus.
Precautions
Hibiscus flowers are often intercropped with peanuts. Occasionally fragments of peanut shells are present. Caution for individuals with severe peanut allergies. Holy basil (Ocimum tenuiflorum), otherwise known as tulsi, is known for its therapeutic power when it comes to maintaining homeostasis and fighting the effects of stress. The tulsi plant has a rich history dating back 3,000 years ago to ancient India. It’s long been considered an “adaptogen” and medicinal, sacred herb in Ayurvedic medicine. Historically, it was used as medicine and still is today due to its anti-stress effects that promote balance throughout the entire body (including in the immune, reproductive, central nervous and cardiovascular systems). Today, tulsi is commonly consumed in supplement form or as holy basil tea. Research tells us that holy basil benefits include naturally decreasing anxiety and adrenal fatigue/dysfunction, as well as decreasing symptoms caused by hypothyroidism, unbalanced blood sugar, acne and more.

Honey - pure, raw, spring honey, harvested June 2022Grower: Grandmother Mountain Organics
Price: $25.00 ( 1 quart (32 oz) )Available (Exact): 12
This spring wildflower honey from our friends in the hive is a little bit like "creamed honey", since it quickly and naturally partly-crystallized. It still melts decadently on warm bread or in your tea. If you prefer your honey completely liquid, no problem, just warm it -- but beware that this will possibly change the allergy-protection properties unique to truly raw honey (via the pollen). This spring's honey is a lighter golden color than last year's spring honey, and my niece (a super critical taster, age 9) keeps declaring it the best thing she has ever (or will ever) taste in her whole life-- though she's said that each time she's had honey from here. Best compliment ever, in any case, and the bees approve. Though bees can fly miles looking for forage, the land nearest our farm is dominated by forest and pasture, so this spring-time mountain honey will be dominated by area tree and wildflower pollen and nectar. The sourwood trees just started blooming after we 'borrowed' this honey from the hives, so we will have to wait until I can bottle the harvested August honey to sample sourwood honey. This honey has been strained with a coarse mesh only. Our honey contains propolis and pollen, and is completely free of any additions. It has never been heated at all by any humans, but I can't speak for the bees.

Hydrangea & Cornsilk TeaGrower: Cline Apothecary
Price: $13.99 ( 5-5.5 oz )Available (Estimated): 1
Hydrangea is a shrub that is native to the Americas and certain parts of Asia.
The plant is commonly grown as an ornamental specimen because of its large, round flower heads—that is, if you don't mind the legend that foretells a life of spinsterhood for your daughters should you permit the plant to grow near your home.
The root of the plant, sometimes referred to as Seven Bark Herb, is traditionally used to prepare a strong tea, often in combination with apple cider.
Corn is a well-known crop around the world. Especially revered by the indigenous cultures of the Americas, Zea mays is the botanical nomenclature for corn. The genus, Zea, stems from Greek meaning "to live" and the species, mays has its roots in the native Mexican language corresponding to "mother" or "mother of life." This is a testament to the importance and life-giving qualities of this plant, not only for people in its native cultures but around the globe.
Native to Mesoamerica and first cultivated by the indigenous people of southern Mexico and Central America, Zea mays is now farmed around the world and has become one of the most important crops for human beings. A member of the Poaceae or grass family, corn has female inflorescences which fruit into individual kernels making up the ‘ear’ of corn. The ear is enclosed in a modified leaf called a husk and is typically harvested in high summer. The corn silks are the shiny, thread-like, elongated styles of the flower that run the length of a cobb of corn. Each style is attached to an individual ovary at one end and at the other outer end develops into the flower’s stigma which has little hairs, helping pollen to adhere and successfully fertilize. Zea mays can either be a perennial or annual depending on the subspecies.
While the corn cobb is an important food source, the corn silk is not a food but has a long history of use for its wellness supporting properties in traditional indigenous healing modalities. As maize spread around the world, so did word of its healthful qualities. Corn silk is a diuretic with an affinity for the kidneys and urinary tract, especially when heat is present. Considered energetically cooling and demulcent, corn silk is sometimes used in traditional folk herbalism as a tonic herb. Corn silk is typically prepared fresh as a tincture or can be dried and used in herbal tea blends and as a stand-alone infusion.
This tea blend contains: Wildcrafted Hydrangea Root and Organic Cornsilk.
Caffeine Free
Organic or wildcrafted dried herbs are from Sewanee, Tennessee or surrounded areas.
