Black Pearl Oyster Mushrooms, fresh (1/2 lb)Grower: Midway Mushrooms
Price: $9.00 ( 1/2 lb )Available (Estimated): 19
The black pearl king oyster (Pleurotus spp.) is a versatile and immensely tasty hybrid between several oyster species. Smaller in stature and arguably more tender than the more common king oyster, these gorgeous mushrooms are a true delicacy: Sliced parallel to the run of the stem into round discs, the black pearl yields scallop-like servings that can be sautéed to bring out an unparalleled mellow, earthy flavor. These mushies are something special: Black pearls represent at least one of the Midway Mushroom boys' number-one favorite cultivar.
Black pearls, like oysters, lion's mane, and shiitake, grow saprophytically (on dead and dying trees). At Midway Mushrooms, we simulate these natural conditions within a climate-controlled indoor environment. Our mycophile growers load nutritionally enhanced sawdust substrate into polypropylene bags for sterilization before inoculating bags with live mycelium hand-selected for quality and vigor. Inoculated bags are carefully incubated before fruiting under parameters tweaked for healthy, happy mushroom growth!
Midway Mushrooms is a certified Produce Safety Alliance farm. Our gourmet mushrooms are grown from recycled agricultural and forestry byproducts.

The oyster mushroom (Pleurotus ostreatus) is a classic culinary staple beloved by many chefs for its meaty umami flavor. This tasty gourmet treat pairs nicely with steak, adds amazing texture and taste to rice, provides an excellent soup centerpiece, and of course is incredible as the main course, sauteed in butter or oil! Many species and strains of Pleurotus perform spectacularly in the kitchen, but we've selected this particular variety for its hardiness, tastiness, and striking silver-blue color.

Ready-to-fruit mushroom grow kits are an easy, fun way to put heaping harvests of mushrooms on the table while learning firsthand about the wild world of mushroom growth.
First time growing gourmet mushrooms? Don’t worry! Ready-to-fruit kits make the process a walk in the park. What’s more, essentially any home is suitable for effective mushroom cultivation. This kit includes a 5+ lb fully myceliated sawdust block and detailed growing instructions. Recommended but not included: A spray bottle for H2O.
From the start of the growing process, mushrooms usually are ready for harvest in 10 to 14 days. Total yields can be expected been 1.5 and 4lb (over multiple flushes), depending on growing conditions.
The blue oyster mushroom (Pleurotus ostreatus) is a classic culinary staple beloved by many chefs for its intense meaty flavor. Resilient, productive, and forgiving of a relatively wide range of growing conditions, this particular strain produces large, stunning mushroom clusters the depth of whose vivid blue color scales inversely with temperature. Common across much of the temperate globe, including on our own Cumberland Plateau, where hardy specimens often can be found temporarily frozen solid during the winter months, white to tan oyster mushrooms of the same species grow saprophytically (on dead and dying trees), particularly in relation to hardwoods like oak and poplar. High in protein, vitamin C, niacin, and potassium, oyster mushrooms are healthy as well as profoundly flavorful. Fascinating, adaptable, and reliable, the blue oyster mushroom is a staple constituent of the mushroom cultivator’s toolkit.

The golden oyster mushroom (Pleurotus citrinopileatus) is a spectacularly tasty specialty cultivar with a distinct sweet, nutty flavor and rich aroma. Their comparatively mild flavor, by comparison with the highly meaty blue oysters, makes goldens an excellent choice for first-time gourmet mushroom eaters. This stunning bright yellow strain was derived from specimens in Eurasia, where it is a prized foraged fungus. Sautéed goldens are an unparalleled centerpiece in Alfredo pastas and risottos, though they also thrive as the main course, pan-seared in butter or oil! High in antioxidants, protein, and B vitamins, these mushies are good for the body as well as the taste buds! Golden oysters are an adaptable grower but fruit best in comparatively warm-weather conditions. They have a shorter shelf life, meaning they are best eaten within a few days after harvest.

The lion's mane mushroom is an iconic toothed fungus that occurs naturally across much of North America, where it grows saprophytically (on dead and dying trees). Closely related members of the Hericium genus occur at temperate latitudes worldwide. Its long, drooping spines are a unique feature of this mushroom. A spectacular seafood substitute that evokes the flavor and texture of crab meat, this otherworldly mushroom currently is the subject of extensive mycological investigation for its potentially neuroregenerative compounds; indeed, early studies suggest that several of its constituent compounds, particularly the “hericenones,” may help counteract age-related memory decline. Sometimes referred to as the bearded tooth mushroom, satyr's beard, or pom pom mushroom, lion’s mane has an extremely rich umami flavor with subtly sweet undertones. What’s more, its fresh, earthy smell can’t help but transport one’s imagination into a lush old-growth forest! Weird and wonderful, lion’s mane is a joy to watch grow (and to eat!).

Mushroom extract- 5-Species Mushroom Extract: Lion's Mane/ Turkey Tail/ Reishi/Maitake/Cordyceps (2oz)Grower: Midway Mushrooms
Price: $15.00 ( 2 oz )Available (Estimated): 34
The otherwordly lion's mane mushroom (Hericium erinaceus) contains a class of compounds known as the “hericenones,” which early rodent studies suggest may help counteract age-related memory decline.
The beloved reishi mushroom (Ganoderma lucidum et al. ) has been a mainstay of traditional Chinese medicine for many centuries. An explosion of recent studies have targeted the reishi mushroom for what are reputed to be anti-inflammatory, antioxidant, and immune-stabilizing properties.
Turkey tail mushrooms (Trametes versicolor) are used commonly in Chinese medicine for their purportedly immune-boosting properties. Notably, they contain polysaccharopeptide (PSP) and polysaccharide-K (PSK), which in early rodent studies have appeared to slow or inhibit the growth of cancer cells.
Maitake mushrooms (Grifola frondosa), alternatively known as hen of the woods, may have serve to enhance immune function and help reduce hypertension.
Cordyceps mushrooms (Cordyceps militaris) contain a compound called cordycepin whose possible health benefits include reducing inflammation, improving heart health, and enhancing immunity.
This high-quality extract was produced through a dual-extraction method whereby dehydrated and powderized mushrooms are soaked in ethyl alcohol for 30 days before undergoing a hot-water decoction. Dual extraction allows for the removal of a wider spectrum of desirable compounds from the mushroom fruitbody than with single-method extraction. Alcohol to water ratio = 45:55. Note that, although increasingly promising mammalian studies hint at the utility of medicinal mushroom extracts, few human studies have focused on the effects of these substances.
These statements have not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure, or prevent any disease.

Shiitake Mushrooms, fresh (1 lb)Grower: Midway Mushrooms
Price: $12.00 ( 1 lb )Available (Estimated): 476
The iconic shiitake mushroom (Lentinula edodes) is known worldwide for its meaty, smoky flavor and wonderfully chewy texture. This variety has been adapted for its delicious and comparatively tender caps, as well as for its striking speckled adornment!
If you've only previously eaten shiitake from the supermarket, prepare yourself for a perhaps unexpected flavor dropkick straight to the tastebuds! Fresh, young shiitakes picked hours before off raw hardwood sawdust should be compared only metaphorically with the dried-out, imported specimens common in many American grocery stores.
Native to eastern Asia and cultivated since ancient times for its culinary and medicinal properties, shiitakes are rich in protein, fiber, niacin, and a number of novel chemical constituents: the polysaccharides Lentinan and KS-2, for instance, have shown promise as potentially tumor-regressing, while the compounds arabinoxylane and eritadenine are suspected, respectively, to boost the immune system's natural killer cells and to help lower cholesterol.
Shiitakes grow saprophytically, that is, on dead and dying trees, (especially on the "shii" tree within its native habitat! Aha!). Speckled Chestnut Mushrooms, fresh (1/2 lb)Grower: Midway Mushrooms
Price: $9.00 ( 1/2 lb )Available (Estimated): 9
The speckled chestnut (Pholiota adiposa) is a stunning, flavorful mushroom with an especially pleasing crunchy texture that persists even after thorough caramelization. Closely related to the yummy nameko mushroom (Pholiota nameko), these beauties have striking dark orange caps topped by "speckled" remnants from the developing mushroom. Chestnuts are excellent simply sautéed until brown and salted. Thanks to their rich, nutty flavor, they also profoundly augment savory dishes like risotto, pastas, and stir fry.

Speckled chestnuts, like oysters, lion's mane, and shiitake, grow saprophytically (on dead and dying trees).
