"NEW" Back Ribs come from the Ribeye section . Meaty and very tender ribs. Prepare ribs with a rub, bake in the oven about 45 minutes then finish them off on the grill. I have discontinued side ribs because they are to fatty. the only problem with back ribs is there is not enough of them! Get them while you can.

A bone in chuck steak from our Scottish Highland steer. As with all grassfed beef, this wonderfully lean meat should be cooked long and low, 25-50* lower than conventional meat. I usually do ribs and roasts, tightly covered, at 250-300 for 3-4 hours, depending on size. An internet search for cooking grassfed beef will yield several good sources of information. Highlands marble well without grain feeding, making their meat leaner, more flavorful, and maintaining a healthier Omega 3 to Omega 6 ratio than conventionally raised cattle. We intensively graze our cattle with daily pasture moves, and we do not treat our animals with hormones, and don't use antibiotics unless there is a specific need. This steer was born on our farm and has never been treated with anything.
