The black pearl king oyster (Pleurotus spp.) is a versatile and immensely tasty hybrid between several oyster species. Smaller in stature and arguably more tender than the more common king oyster, these gorgeous mushrooms are a true delicacy: Sliced parallel to the run of the stem into round discs, the black pearl yields scallop-like servings that can be sautéed to bring out an unparalleled mellow, earthy flavor.
