Eggs are one of the most economical and nutritious proteins out there. You can feed a family on a few dollars, literally. Compare the cost of a frittata with burgers or steak, or a roast chicken! These are very large (jumbo-sized) white and occasionally green-tinted eggs from our mixed flock of Khaki Campbells and Golden Cascades. These ducks are free-range, roaming the yard and wherever they feel like, really. They do get traditional layer feed overnight but only have access to our yard, pastures, and pond all day long. These eggs have deep orange yolks and thick whites that will show you why they’re called “whites” (and make chicken egg whites look eerily yellow). I don't think there is any difference in taste, but I do think there is a noticable difference in texture - the duck eggs have firmer whites and very rich yolks, I like them much better than chicken eggs. Duck eggs are the best for baking, giving extra loft and lightness to cakes, meringues, etc. They also make fluffier scrambled eggs and omelettes as well, and are superb hard-boiled. Note: it is possible to have an allergy to duck eggs due to the difference in their protein, which generally manifests as anything from slight nausea to stomach-bug-type symptoms. HOWEVER - on the other hand, if someone has an “egg allergy” it is most likely only to chicken eggs and NOT to duck eggs, and quite possibly they can actually eat eggs as long as they are duck! I find it frustrating and sad that such potentially life-changing information is so little-known.

Our chickens scratch and wander and are rotated through green pastures behind our sheep and goats. They live a life of leisure and when they are not out and about, they are roosting or laying eggs in their fabulous chicken camper. I'm quite pleased to have made the switch to Certified Organic Feed last year. Though, it has increased my cost, I'm thrilled to know that they are not ingesting the pesticides and herbicides (or GMOs) used in conventional feed and that we are supporting other organic farmers that are investing in good soil for a healthier planet.

Our chickens are actually pretty entertaining to have around, and they're friendly and curious. They find random bugs and greens to eat, & we supplement their diet with kitchen scraps, garden trimmings, and certified-organic grains (still non-gmo!), grown and milled by an organic cooperative in Kentucky. We have a backyard heritage-breed flock of 47 free-ranging layers (mostly hatched on-farm from welsummers, cochins, australorps, barred rocks, cuckoo marans, buff orpingtons, Rhode Island reds, Americaunas, and other ancestry), 3 roosters, 8 heritage turkeys, and a mated pair of geese. The chicken eggs' yolks are bright and tasty, and the buff to dark brown or blue or green shells are strong. The birds have wild forage, with no herbicides or pesticides used on any of our 17 acres, and the birds are unmedicated, happy, healthy, and humanely treated. Help put our small surplus to use. Our Ameraucana rooster also has grey neck feathers. They are a light opaque smoky color with a light beige strip running down the middle of the feather. It also has the shadow feature along the edges and sometimes there are beige accents on the feathers. The feathers are 3-4 inches long and around 3/4 inch wide. Six feathers per bag. Would make a nice background feather with a bright accent feather for your project. All feathers are washed.

Ameraucana neck feathers are also multicolored but thinner than saddle feathers. These feathers are grey at the base with the grey moving up to the tip, surrounded by the orange to light brown shadow part of the feather. They are 3 1/2 to 5 inches long and 1/2 at the base. Another stunning feather for multiple uses. Four feathers per bag. All feathers are washed.

Ameraucana roosters are multicolored pallets of feathers that are hard to come by. Their saddle feathers are wider at the base and taper to a point at the end. The base is dark grey with some down and morphs into an orange brown, slick feather with the shadow feature. Very cool in appearance and a great accent for any use. Most feathers are 5 inches in length and at least an inch at the base and tapers to about 1/2 inch at the tip. Two feathers per bag. All feathers are washed.

At first glance these feathers look like saddle feathers but upon closer inspection a diamond pattern at the base of the feather is revealed! They also flop over and curve like the sickle feathers of the tail but this is a much more delicate feather. The feather itself is wide at the base but tapers up to the end of the feather and also has the shadow. A beautiful feather for hats, hair pieces, boutonnieres, or any other artistic form.
