Sustainably raised on grass in Monteagle! The rib and loin chops are the tenderest and leanest cuts in the lamb and they are great for quick grilling or searing. These are extra thick - 1 and 1/2 inch and there are 6 per package. This meat came from 100% grass fed Gulf Coast Native cross lambs that grazed in rotation on the green pastures at Summer Fields. Gulf Coast Native sheep are a rare breed that are smaller in size but better adapted to life in the southeast than many wool breed. By purchasing this meat, you are supporting our efforts to continue to raise these rare sheep. Hormone and anti-biotic free. Meat is sold frozen. USDA certified. Roughly 1 lb package of ground lamb, great for almost anything - Moroccan spiced burgers are my favorite! This sheep was born and raised here at Solace Farm. We have Tunis sheep, a wonderful multipurpose breed (good fleece, meat, and milk sheep) little-known here in the US. We raise our sheep with rotational grazing, moving them every day most of the year, for both animal and pasture health. This enables us to avoid chemical wormers - we also don't use any antibiotics, or anything, really, besides grass, fresh water (rain or well), hay, and mineral/seaweed supplements.

~.2 lb package of 2 kidneys, you just can't make a steak n kidney pie without it. These need to be prepped for cooking by removing the membrane and snipping out the white interior threads. This sheep was born and raised here at Solace Farm. We have Tunis sheep, a wonderful multipurpose breed (good fleece, meat, and milk sheep) little-known here in the US. They are whole and will need to have the membrane removed and the white core snipped out before cooking in a sautee or braise. Two kidneys per package.
