It is baked, cut, and baked again resulting in a cookie that is firm, crunchy and perfect for snacking on or dipping in your favorite beverage. A great sandwich rye. Smoked turkey, Veggie Rueben, Tuna salad. Don't forget the sauerkraut, onions and mustard. Lighter (colored) rye, baked in pans directly on the hearth. 60% whole rye, 40% unbleached unbromated enriched wheat flour, sea salt and water. I use the same process as in making my other breads, cool fermentations and long proofing times, to produce this dense sourdough rye.

Naturally fermented whole wheat bread. Ingredients-whole wheat, whole rye, water and sea salt. Our dough is fermented three times before being shaped into loaves. It is then allowed to proof in a flour dusted brotform. After this final fermentation the loaves are turned out onto a bread peel and cooked directly on the hearth of our wood fired brick oven. The reward for this process is a loaf of bread that is pleasantly sour and moist, with a perfect crumb and well developed crust. Your order will be baked on delivery day.
