Simple winter slaw
Source: Jess Wilson (Entered by Jessica Wilson)This is what I throw together when I’m craving fresh veggies in the winter and I only have a few fresh ingredients.
Serves: 8 - 10
Vegan!
Ingredients
1 lb
cabbage (any kind)
5
carrots
2
apples
1/4
medium onion
1/4 cup
apple cider vinegar
1/4 cup
vegetable oil
1/2 tsp
salt
1/4 tsp
black pepper
Step by Step Instructions
- Finely slice cabbage by hand or with a slicing attachment on a food processor.
- Shred carrots, onion, and apples, and toss in a bowl with the cabbage.
- Mix oil and vinegar, salt, and pepper, and add all at once to the vegetables.
- Let stand a few hours in the fridge (if you have the time) and serve cold.
