Recipes

Immunity Soup

This recipe is a variation on chicken soup that includes garlic, ginger, and shiitake mushrooms. Though I am not a doctor, I like to think that this soup also acts as a mid-winter tonic against all the illnesses.

-Leftover chicken and chicken bones (you can use a whole chicken too but I generally do this with leftovers)
-Water to cover
- Olive oil – one TLBSP
-Carrots – one or two
-Onions – one large
-Garlic – one whole head
-Fresh Ginger root – about 3 TLBSP chopped
-1/2 lb of fresh shiitake mushrooms (or equivalent dried)
- Rice noodles (these can be hard to find. Egg noodles can also be used for a more traditional noodle soup).

- sea vegetables Click here to learn more are also harder to find but if you have them they are a great addition.) I use a pinch of each wakame, arame, kombu, hijiki,and kelp.
– Salt and pepper to taste

In a large sauce pan cover leftover chicken with water. Simmer for an hour or so. Let the chicken cool and strain our the meat and bones. Separate the meat and fat from the bones and place the meat back into the broth.

In a large skillet heat the olive oil and gently saute all of the vegetables (not including the sea vegetables). Add the vegetables and the sea vegetables and allow to simmer until to desired tenderness.

Add rice noodles a few minutes before serving. Remove from heat as soon as the rice noodles are tender.

Salt and pepper to taste.

Enjoy the soup, and get some rest.

In the five year history of the market we have only closed for a holiday once, which means that two weeks off seems a bit like an eternity! Can we make it? There are plenty of things on the market this week including fresh turkeys for a Christmas feast, yule logs cakes, and many fantastic locally made gifts. Make sure you take some time with your order this weekend and prepare well for our long winter break!

While experimenting with some roast profiles, we’ve discovered that this Sumatran is very versatile and is quite excellent at a medium roast! Very flavorful and aromatic in the grounds and in the cup, with the same great body that is a hallmark of a Sumatran coffee”.

Fountain Springs Farm has FRESH TURKEYS available. If you missed these on Thanksgiving, now is your chance. They are wonderful and perfect for a Christmas feast. These turkeys will be delivered to the community center on Thursday the 20th of December and will keep nicely in your fridge between then and Christmas.
