Recipes


SLOW-ROASTED, BACON-WRAPPED RABBIT (serves 4-6)
INGREDIENTS:
One rabbit from Three Oaks Rabbitry
Five slices of bacon
Vegetables in large chunks (this is usually whatever I choose to have as a side dish – sweet potatoes, or apples and onions, carrots, turnips etc.)
A splash of olive oil (if needed)
Salt and pepper
A splash of cider or white wine (optional)

DIRECTIONS:
Rinse the rabbit and pat dry. Sprinkle the rabbit with salt and pepper. Place a splash of olive oil in a roasting pan with a lid and add the rabbit on top. Once in the roasting pan, drape the rabbit with the bacon. With the pan open, roast the rabbit for 15 minutes at 400 degrees.

After 15 minutes, add the vegetables and a splash of wine or cider (plus any olive oil for the vegetables) place the lid on the roasting pan, and turn the oven temperature to 200 degrees. Cook until the rabbit is done (160 degrees on a meat thermometer) and the vegetables are tender – this usually takes 2 or 3 hours.

I generally place the rabbit in the oven after lunch and take it out for dinner. If this is your first time slow roasting meat, just check on it once in a while to make sure that the meat is staying moist – most likely you’ll have an abundance of good juices from the meat, bacon, and vegetables. To serve the rabbit, I generally cut it into 6 pieces, the two back legs, I split the back down the middle, and also serve the two ribs and front legs together. Alternately, rabbit is fairly easy to pull from the bones when cooked this way.

JUST IN FROM DOGWOOD VALLEY GREENHOUSE
Dogwood Valley Greenhouse has added several nice houseplants to the listings. Available now are needlepoint ivy, cape primrose, wandering jews, and two colors of spider plants, all in 10" hanging baskets. We also have several very nice succulent planters and herb collection baskets for your table or windowsill. Panda plants and aloe vera plants would also be good additions to your winter indoor garden. All these need to stay inside until our frost-free date near the end of April, then will be happy to spend the summer on porch or patio.

We are also making decisions about spring offerings of flowering hanging baskets, vegetable plants in gallon pots, and 6 packs of bedding plants. If there is something special you would be interested in, please let us know by e-mail to tnhomeschooler@yahoo.com.

Jess Wilson of In Town Organics and Summer Fields sends the following message: I want to point out something very exciting that happened in 2014 – that was the opening of Three Oaks Rabbitry on Gudger Rd. in Sewanee. I have raised rabbits for our family and a few lucky others for the past ten years. These rabbits live in large cages that are moved daily to allow access to fresh grass and plenty of hopping room and sunshine when desired. My rabbits are fed oats and locally grown alfalfa hay. I could not sell these rabbits legally in the past because there was not a processing facility in the area. Erich Eichler was willing to do the work (and waiting) needed to change this. Last year his processing facility was inspected by the USDA and FDA for processing rabbits for legal sale in our area! I’m so excited to finally have a legal outlet for selling my rabbits. Three Oaks Rabbitry sells my rabbits as well as rabbits that Erich raises himself and you can purchase them on the market! Domestic rabbit is an incredibly lean, white meat that can be substituted for chicken in many recipes. Check out a favorite rabbit recipe from our family in the RECIPE section.

Recipes


SLOW-ROASTED, BACON-WRAPPED RABBIT (serves 4-6)
INGREDIENTS:
One rabbit from Three Oaks Rabbitry
Five slices of bacon

DIRECTIONS:

MARCELLA FROM FOX FARM has let us know that her pork chops and breakfast sausage are on sale this week.

She has just accepted a teaching job that will not allow her to continue selling on the CFM market. Fox Farm will continue to sell whole and half hogs and lambs on a limited basis however. Check back weekly.

She says further, “I want to thank all our faithful customers and I look forward to rejoining the market during summer vacation.”

Learn about season extension in high tunnel production systems in a new webinar series sponsored by the Center for Crop Diversification, the University of Kentucky College of Agriculture, Food and Environment, and the Barnhart Fund for Excellence. If you know of anyone who isn’t receiving our (general) e-mails that we send to the entire customer and grower bases (which would include Order Confirmations that come out of our proprietary software e-mail account that is re-directed via Mailgun.us: We have been working with a tech from BLomand who has done a large amount of troubleshooting and research.

If you have an e-mail address that is through Yahoo or BellSouth (Yahoo actually hosts BellSouth e-mail), you will need to go into your Contacts list and add these two addresses:

*@mailgun.us

If you have an e-mail address through BLomand, you will need to go into your Gray Mail and add as a Friend these two addresses:
cumberlandfm@gmail.com
mailgun.us

If you have an e-mail address that is from another provider (gmail should be OK, but you never know…), use one of the iterations above.

Also, if you want an entire domain to be “approved,” you can, for example, enter the following as a Contact/Friend (for gmail, let’s say):
*@gmail.com

If, after doing all this, you are still not receiving our e-mails (at the very least the Saturday Blog opening the market), you will have to get in touch with your e-mail provider and tell them to recognize our address as well as the mailgun address. Just giving them the cumberlandfm@gmail.com address will not be sufficient.

TO ALL OUR CFM GROWERS AND CUSTOMERS
We would like to thank you all for the wonderful year we’ve just closed. In addition to our returning folks, we welcomed new growers with a variety of special offerings as well as new customers who greatly appreciated the incredible wealth of goods offered at market. We held several events so customers could meet our growers and artisans face to face and sample their wares. Thanks to you all, these events were wildly successful, and we look forward to holding them again in 2015.

Everyone, please mark your calendars for January 13, 1:30 p.m. We will hold the CFM Annual Meeting at the Sewanee Community Center before market opening. We value everyone’s input, so please try to attend. Items being voted upon will require current market membership for those desiring to vote. This means you have either paid your dues or you have earned them through volunteering the required number of hours. An agenda for the meeting will be provided a bit later. Hope to see you there.

WHITE CITY PRODUCE AND GREENHOUSES has let us know that this coming week will be their last week on the market until Spring. They greatly appreciate everyone’s support this season and are looking forward to a great 2015 season. Happy New Year! CSA’s will remain on the market since they’re a pre-order.

FARMER BROWNS is listing lettuce again! We have 3 types this week: the Bibb, Spikey Red and, for the first time in a long time, Winter Romaine. Looking forward to the market again!

DOGWOOD VALLEY GREENHOUSE has some very nice herb baskets which will make useful as well as pretty table decorations this winter. With a little water and a little artificial light, they will produce clippings for your wintertime cooking. Available herbs are:
LEMON BALM
MINTS (chocolate, peppermint, pineapple [variegated], spearmint, grapefruit)
OREGANO (Greek or variegated)
ROSEMARY
RUE
SAGE, Garden
STEVIA (small but healthy)
THYME (Lemon, English, silver-edged, citrus, lime)
Please specify three herbs to be included. Finished basket is approximately 12" diameter and 6" tall.

We have a couple left-over kissing balls that will make good decorations for your winter garden for several more weeks. Right now these are on after-Christmas close-out special, marked half-price.

We also have some other nice house plants, dish gardens, windowsill gardens, and hanging baskets to brighten up your indoor wintertime. Check them out on the market!

DON’T FORGET THE NEW WORKSHOP SERIES starting in January 2015. These six workshops will be taught by experienced growers and UT personnel and will provide growers and agricultural professionals with training in planning, structuring, marketing, managing, analyzing profitability and expanding a CSA.

These two-hour workshops, planned from 1-3 PM (NOTE: Workshops will be 1-3 PM EST or CST according to the host farm time zone.) on Monday afternoons, will be offered on working farms throughout Tennessee from January to June.

1) January 26, Choosing Your Crops and Varieties, and Scheduling Their Planting in the Greenhouse and the Field, led by Jeff Martin, Plant Sciences, and Adam Colvin, Colvin Family Farm, Spring City, TN

2) February 9, Options for CSA Legal Structure and Analyzing CSA Profitability, led by Chris Clark and Margarita Velandia, Agricultural and Resource Economics, Becky Jacobs, College of Law, and Ray and Bart Gilmer, Falcon Ridge Farm, Toone, TN

3) March 16, Managing Growth of Your CSA, Labor Management, Apprenticeship Programs and Quality of Life, led by Jeff Martin, Plant Sciences, and Tana Comer, Eaton’s Creek Organics, Joelton, TN

4) April 13, Adding Fruit Crops to Your CSA, led by David Lockwood, Plant Sciences, and Shannon Meadows, Mountain Meadows Farm, Heiskell, TN

EXTENDING YOUR GROWING SEASON
Learn about season extension in high tunnel production systems in a new webinar series sponsored by the Center for Crop Diversification, the University of Kentucky College of Agriculture, Food and Environment, and the Barnhart Fund for Excellence. There will be six webinars, each 75 minutes long, in February and March of 2015. The series will cover market opportunities, structure options and construction, organic production and certification, crop and equipment options, pest pressure and control, as well as a summary of the Environmental Quality Incentives Program (EQIP) Seasonal High Tunnel Initiative.

If you know of anyone who isn’t receiving our (general) e-mails that we send to the entire customer and grower bases (which would include Order Confirmations that come out of our proprietary software e-mail account that is re-directed via Mailgun.us: We have been working with a tech from BLomand who has done a large amount of troubleshooting and research.

If you have an e-mail address that is through Yahoo or BellSouth (Yahoo actually hosts BellSouth e-mail), you will need to go into your Contacts list and add these two addresses:
cumberlandfm@gmail.com
*@mailgun.us

If you have an e-mail address through BLomand, you will need to go into your Gray Mail and add as a Friend these two addresses:
cumberlandfm@gmail.com
mailgun.us

If you have an e-mail address that is from another provider (gmail should be OK, but you never know…), use one of the iterations above.

Also, if you want an entire domain to be “approved,” you can, for example, enter the following as a Contact/Friend (for gmail, let’s say):
*@gmail.com

If, after doing all this, you are still not receiving our e-mails (at the very least the Saturday Blog opening the market), you will have to get in touch with your e-mail provider and tell them to recognize our address as well as the mailgun address. Just giving them the cumberlandfm@gmail.com address will not be sufficient.

We hope this helps resolve these problems going forward!

REQUESTING DELIVERY
If you would like your market order delivered, please contact Rachel Lynch, the new Sewanee delivery driver. E-mail: radelo50@yahoo.com or phone 931-598-0774.

Please remember that payment of all CFM orders MUST be made in advance of Tuesday’s delivery. Checks must be mailed in time to be posted to customer accounts before closing of market ordering on Monday. To ensure your account always has a positive balance, the CFM prefers payments in increments of at least $100.00. Mail checks made out to CFM to Kir Strobel, 744 Timberwood Trace, Monteagle, TN 37356.

Should at-home delivery not work for you, you may leave your order at the Center to be picked up by you or a designée by 6 p.m. Wednesday. As with any left-behind order, there will be a $3.00 fee unless that order has been prepaid in full in advance. Don’t forget there is no freezer at the Center for the foreseeable future, so it is imperative your items be picked up in a timely manner.

Before you order, be sure you see the little shopping cart. If you do not, log out and log in again. If this fails, turn off your computer completely and start again. This includes ordering from smart phones.

If you want to leave a comment for a grower, be sure to put it in the “Leave comment for grower” area in RED beneath the item you’re ordering. Placing comments in the market manager section will not be seen by the growers.

If you do not receive an order confirmation within 5 minutes, your order has NOT been placed in the system. E-MAIL OR CALL US to get the problem solved so you will not be disappointed on market day.

Please remember the market closes at 10 a.m. on Monday; therefore, your order must be completed and placed, and you should be signed out of the software.

Not-So-Good News


This is Linda from Dogwood Farm letting you all know that I have somehow injured my left knee. It is now immobilized until I can have an MRI done to determine the damage. Unfortunately, this means I will be unable to cook for you this week and maybe into the future. What a great time to be incapacitated! I am so sorry. Wish me luck, though, and have a blessed and happy Christmas and holiday season.
