Claire Reishman of SAS (and a CFM customer) decided to do an egg comparison to see first hand the differences between local eggs and store bought. Following are her findings. Thank you, Claire, for this enlightening information. (Edited for length.)

When I first began buying food from the Cumberland Farmers Market, I didn’t think about eggs. Gradually, I broadened my weekly fresh vegetables order to include eggs and meats, and now I am an ardent buyer of local chicken and duck eggs. My decision was first based on my understanding of the way laying hens are treated by major egg packagers. I knew I had to support local free-range chicken owners by buying eggs laid by chickens which are pastured and fed appropriately. So I began to buy all my eggs from responsible local providers and now am an ardent promoter of fresh local eggs not only because of the humane treatment of chickens, but also because of the difference in taste that is clearly evident in them.

The easiest way to taste the difference between “store-bought” eggs and responsibly produced eggs is to cook two soft-boiled eggs for breakfast one day, tasting them side by side. In that way one can actually see the difference: the yolk of a pastured hen’s egg is rich and dark orange-gold, whereas the yolk of ordinary eggs is much paler. That difference is also reflected in the taste: pastured hens’ eggs are rich and substantive in comparison to eggs produced by large commercial growers, primarily because the diet of pastured hens is so varied rather than just commercial feed.

Eggs are one of our basic foods, and it simply makes sense to me to use the best quality eggs I can find – all of which are available on the Cumberland Farmers’ Market website. Try your own taste test and see if you agree with me that we are indeed lucky to have the option to buy eggs from such good locally raised and responsibly fed chickens.
