"Purple Belle" produces small bell peppers that pass through a purple stage on the way from green to red. Most bell pepper (Capiscum annuum) cultivars start out green, and the majority are harvested before going any further on the color spectrum. Because it takes a longer time to grow purple or red or orange peppers, produce sellers set a much higher price for them. When you pick peppers while they are still green, the seeds inside have not matured to the point where they could reproduce a new plant, so the plant keeps producing more fruit. Allowing the fruit to stay on the bush until ripening to purple, say, signals the plant that the pepper is maturing and additional fruit may not be needed, leading to a lower yield per plant.
